GUAVA GUAVA BAHN MI

This is our take on the classic Vietnamese sandwich - the almighty Bahn Mi. Banh mi sandwiches are a street food that originated in Saigon. Usually served on soft French baguettes, they’re a delicious mix of French and Vietnamese cuisine. Typically, they contain pickled carrots, daikon, chiles, cucumber slices, cilantro, mayo, and a protein. NOTE: traditionally these have paté on them but you do you!!!
Ingredients: Serves Four
- the best french baguette you can find - with all sammies the bread makes it
- Black's Guava Guava marinated pork tenderloin - 2 tenderloins
- 2 small carrots - shredded - pickled in white vinegar
- 2 small daikon - shredded - pickled in white vinegar
- 1 small red onion - pickled in white vinegar
- 4 small cucumbers - sliced thin long wise
- 1/2 jalapeno - sliced thin (rings)
- 1/2 cup fresh cilantro leaves
- lime wedges - a little squeeze
- sea salt and black pepper to taste
- mayo - a smear to taste
Marinate the pork in Black's Guava Guava Hot Sauce - anywhere from 2 hours to overnight will work. The more the better!
Pickle the veggies - carrots, daikon, jalapeño in white vinegar. You can do this quick while you prep all other ingredients or for however long you wish. We keep pickled veg around for all the time use. How cool are we?
We prefer grilling the pork but you can pan sear over high heat. Get a nice crust on the outside. Make sure the pork is cooked to 145° to 150°. Slice into medallions.
Build your sandwich. You can layer this however you'd like. Spread mayo (and/or paté) onto both sides of your bread. Layer pork, pickled veggies and cucumbers on top. Add cilantro leave to your taste...we like a lot. Squeeze some lime. Salt and pepper to taste. A little dab of Guava Guava Sauce can't hurt. Now taste the most amazing amalgam of flavors you've ever had!!!
